Lemon Balm

Bees love this lemon-scented herb, which is what earned it the name of 'Melissa' from the Greek for 'bee'. The bright green, puckered, egg-shaped leaves of this plant have an excellent lemon flavor and scent. The lemony leaves have a slight undertone of mint and are best used fresh. Toss fresh leaves, whole or chopped, into salads, poultry dishes, punch, or in marinade for fish. Even though leaves are best fresh, one can dry the stems and leaves and make a wonderful, invigorating tea. 2007 Herb of the Year! Reseeds rampantly, be sure to cut it down to the ground when it sets flower buds.
